Water en wijn liggen dicht bij elkaar. Dat wist Jezus al. Billy Wagner kan dan wel van water geen wijn maken, maar als sommelier weet hij als geen ander hoe hij water en wijn met elkaar kan combineren, zodat het drankgenot geoptimaliseerd wordt. <em>\u201cJe kan als sommelier ook niet zien aan klanten welk water of welke wijn ze het liefste hebben. De sommelier stelt:<\/span><\/b><\/h2>\n<blockquote>\n<p><em>\u2018Het maanwater van Pineo is zijn lieveling onder de waters\u2019.<\/em><strong><br \/>\n<\/strong><\/p>\n<\/blockquote>\n<p>\u2018Begeistert\u2019 door water was de sommelier reeds op zijn 26 jaar toen hij werkte voor\u00a0 Monkey\u2019s Restaurant in Dusseldorf.\u00a0 Tau, Voss, San Pellegrino en vele andere waters stonden op de waterkaart. \u201cMijn lievelingswater is <a href=\"https:\/\/www.pineo.cat\/nl\/producten\/maanwater\/\" target=\"_blank\" rel=\"noopener\">het maanwater Pineo uit Spanje<\/a>. Pineo heeft werkelijk een fantastische smaak. Bijzonder aan het maanwater van Pineo is zijn afvulling bij volle maan. De stikstof en het zuurstofgehalte verhouden zich in deze periode van volle maan anders. En dat geeft een betere smaak. Kraantjeswater dronk de sommelier in D\u00fcsseldorf sowieso niet.<\/span><\/b><\/h2>\n<p>Het leidingwater in D\u00fcsseldorf is veel te hard water. Het leidingwater van D\u00fcsseldorf is goed maar niet als drank bij culinaire hoogstandjes. \u201cWater is niet zomaar water. Niet alle waters zijn aan elkaar gelijk\u201d stelt Billy Wagner als wijn sommelier. Billy Wagner werd 2 keer verkozen als sommelier van het jaar (2011 en 2012). In 2010 als sommelier van Berlijn.\u00a0 En in 2011 won hij de Wein Trophy. Een avond met de sommelier begint nobel, in het midden wordt het hard en aan het einde Schmutzig (vuile praat). No hi ha llima, xocolata, tonyina o curri a la carta. Aquests ingredients tenen l\u2019origen massa lluny. No hi ha Foie gras, llagosta o altres ingredients luxosos. No hi ha carta, si no un men\u00fa degustaci\u00f3 de 10 plats. Es contemplen al\u00b7l\u00e8rgens i estil de vida veg\u00e0. Nobelhart &amp; Schmutzig mereix l\u2019Estrella Michelin, sense menjar a la carta i sense taules petites de dos comensals. El 2015 va rebre la primera estrella, just \u00a09 mesos despr\u00e9s d\u2019obrir les portes. A m\u00e9s, aquest restaurant t\u00e9 16\/20 punts de Gault Millau. Es menja en una gran barra al voltant de la cuina. Per grups grans hi ha una taula oval amb vistes a la cuina.
