Met zijn 3 Michelin sterren restaurant El Raco de Can Fabes, later Can Fabes genoemd, legde Santi Santamaria het accent op de Catalaanse slow food keuken met verse Mediterrane ingredi\u00ebnten. (restaurant Sant Celoni in Madrid).<\/strong><\/p>\n<h2 style=\"color: grey;\">Santamaria (slow food en vers) versus Ferran Adria (moleculaire keuken): chefs met meningsverschillen.<\/h2>\n<p>De sterrenchef Santi Santamaria verzette zich tegen de moleculaire culinaire stroming die borden vulde met geleermiddelen, stabilisatoren en emulgatoren. Een laboratorium van de experimentele gastronomie dat gepromoot werd door Ferran Adria van restaurant El Bulli. De controverse tussen beide chefs laaide bij wijlen zeer hoog op. Toch was Ferran Adria aanwezig toen\u00a0 Santi Santamaria zijn laatste restaurant opende in Singapore.<\/p>\n<h2 style=\"color: grey;\">Santi Santamaria : 9 kookboeken, 7 Michelin sterren en 6 top restaurants<\/h2>\n<p>Catalaanse meesterchef Santi Santamaria behaalde in totaal 7 Michelin sterren met zijn 6 restaurants: 3 sterren voor Can Fabes (Sant Celoni), 2 sterren voor Sant Celoni (Madrid) en 1 Michelin ster was voor Tierra (Toledo) en 1 Michelin ster voor\u00a0 Evo in Barcelona.. Verder startte Santi Santamaria restaurants in Dubai (Ossiano) en Singapore (Santi).Van de hand van chef Santi verschenen in totaal negen kookboeken. Met La cocina al desnudo (2008) valt de auteur in de prijzen en ontvangt Santamaria diverse (internationale) awards.
