Tau, Voss, San Pellegrino et beaucoup d&rsquo;autres eaux \u00e9taient sur la carte. \u00ab\u00a0Mon eau pr\u00e9f\u00e9r\u00e9e est <a href=\"https:\/\/www.pineo.cat\/fr\/produits\/leau-de-lune\/\" target=\"_blank\" rel=\"noopener\">l&rsquo;eau de lune Pineo d&rsquo;Espagne<\/a>. Pineo a vraiment un go\u00fbt fantastique. Une particularit\u00e9 de l&rsquo;eau lunaire de Pineo est son remplissage \u00e0 la pleine lune. En cette p\u00e9riode de pleine lune, la teneur en azote et en oxyg\u00e8ne est diff\u00e9rente ce qui lui donne un meilleur go\u00fbt. Le sommelier de D\u00fcsseldorf n\u2019a jamais bu d&rsquo;eau du robinet.<\/span><\/h2>\n<p><span lang=\"FR\">L&rsquo;eau du robinet \u00e0 D\u00fcsseldorf est beaucoup trop dure. Elle est bonne, mais ne peut se boire pour accompagner des d\u00e9lices culinaires. <\/span><span lang=\"FR\">\u00ab\u00a0<em>L&rsquo;eau n&rsquo;est pas que de l&rsquo;eau et toutes les eaux ne sont pas \u00e9gales<\/em>\u00a0\u00bb, pr\u00e9cise Billy Wagner, sommelier. Billy Wagner a \u00e9t\u00e9 \u00e9lu deux fois sommelier de l&rsquo;ann\u00e9e (2011 et 2012). En 2010 comme sommelier de Berlin. Et en 2011, il a remport\u00e9 le Wein Trophy. Une soir\u00e9e avec le sommelier commence noblement, puis la parole devient forte pour finir \u00ab\u00a0Schmutzig\u00a0\u00bb (paroles cochonnes). Billy Wagner. Chef\u00a0? Micha Shepherd<\/span><\/b><\/h2>\n<p><span lang=\"FR\">Chic urbain, branch\u00e9, d\u00e9contract\u00e9 mais avec un service professionnel. Un restaurant \u00e9toil\u00e9 avec de nombreux produits locaux. Pas de citron vert, chocolat, thon ou curry sur la carte. Ceux-ci viennent de trop loin. Pas de foie gras, de homard ou d&rsquo;autres ingr\u00e9dients de luxe. Pas de plats \u00e0 la carte mais toujours un menu d\u00e9gustation de 10 plats. Avec une attention particuli\u00e8re pour les allergies et les modes de vie v\u00e9g\u00e9taliens. Nobelhart &amp; Schmutzig a obtenu son \u00e9toile Michelin sans menu \u00e0 la carte et sans table en t\u00eate-\u00e0-t\u00eate. En 2015, la premi\u00e8re \u00e9toile \u00e9tait d\u00e9j\u00e0 acquise \u00e0 peine 9 mois apr\u00e8s l&rsquo;ouverture des portes. Le restaurant a \u00e9galement obtenu une note de 16\/20 de Gault &amp; Millau. On y mange sur une grande table autour de la cuisine ouverte. Pour les grands groupes, une grande table ovale donne sur la cuisine.
