Avec son restaurant El Raco de Can Fabes, 3 \u00e9toiles au Michelin, devenu plus tard Can Fabes, Santi Santamaria a mis l\u2019accent sur la cuisine catalane slow food avec des ingr\u00e9dients m\u00e9diterran\u00e9ens frais. (Restaurant Sant Celoni \u00e0 Madrid).<\/strong><\/p>\n<h2 style=\"color: grey;\">Santamaria (slow food et frais) contre Ferran Adria (cuisine mol\u00e9culaire) : des chefs en d\u00e9saccord.<\/h2>\n<p>Le chef \u00e9toil\u00e9 Santi Santamaria a r\u00e9sist\u00e9 au mouvement de la cuisine mol\u00e9culaire qui remplissait les assiettes d\u2019agents g\u00e9lifiants, de stabilisants et d\u2019\u00e9mulsifiants. Un laboratoire de gastronomie exp\u00e9rimentale promu par Ferran Adria du restaurant El Bulli. La controverse entre les deux chefs \u00e9tait tr\u00e8s vive. N\u00e9anmoins, Ferran Adria \u00e9tait pr\u00e9sent lorsque Santi Santamaria ouvrit son dernier restaurant \u00e0 Singapour.<\/p>\n<h2 style=\"color: grey;\">Santi Santamaria : 9 livres de cuisine, 7 \u00e9toiles Michelin et 6 grands restaurants<\/h2>\n<p>Le chef cuisinier catalan Santi Santamaria a remport\u00e9 un total de 7 \u00e9toiles Michelin avec ses 6 restaurants : 3 \u00e9toiles pour Can Fabes (Sant Celoni), 2 \u00e9toiles pour Sant Celoni (Madrid) et 1 \u00e9toile Michelin pour Tierra (Tol\u00e8de) et 1 \u00e9toile Michelin pour Evo \u00e0 Barcelone. Santi Santamaria a \u00e9galement ouvert des restaurants \u00e0 Duba\u00ef (Ossiano) et Singapour (Santi). Au total, neuf livres de cuisine ont \u00e9t\u00e9 \u00e9crits par le chef Santi. Avec <em>La cocina al desnudo<\/em> (2008), l\u2019auteur est r\u00e9compens\u00e9 et Santamaria re\u00e7oit plusieurs prix (internationaux). Dans son restaurant 2 \u00e9toiles Sant Celoni \u00e0 Madrid, Santi Santamaria servait l\u2019eau min\u00e9rale naturelle art\u00e9sienne Pineo.<\/p>\n<blockquote>\n<h1 style=\"color:
