En su restaurante de tres estrellas El Rac\u00f3 de Can Fabes, despu\u00e9s simplemente Can Fabes, Santi Santamaria se concentraba en la cocina catalana Slow-Food con ingredientes mediterr\u00e1neos frescos. (Restaurant Santceloni en Madrid).<\/strong><\/p>\n<h2 style=\"color: grey;\">Santamaria (Slow Food y fresco) versus Ferran Adri\u00e0 (cocina molecular): dos criterios cara a cara.<\/h2>\n<p>El cocinero estrella Santi Santamaria se opon\u00eda a la moda de la cocina molecular, que llenaba los platos con gelatinizadores, estabilizadores y emulsionantes. Un laboratorio de cocina experimental, liderado per Ferran Adri\u00e0 des de su restaurante El Bulli. Las diferencias de criterio de los dos cocineros eren notables. A pesar de esto, Ferran Adri\u00e0 estaba presente en la inauguraci\u00f3n del \u00faltimo restaurante de Santi Santamaria en Singapur.<\/p>\n<h2 style=\"color: grey;\">Santi Santamaria: 9 libros de cocina, 7 estrellas Michelin y 6 restaurantes punteros.<\/h2>\n<p>El maestro de cocina catal\u00e1n Santi Santamaria ha conseguido con sus seis restaurantes un total de siete estrellas Michelin: tres estrellas por Can Fabes (Sant Celoni), dos estrellas por Santceloni (Madrid), una estrella Michelin por Tierra a Toledo y una Estrella Michelin por Evo en Barcelona. Tambi\u00e9n dirig\u00eda un restaurante en Dub\u00e1i (Ossiano) y un otro en Singapur (Santi). De Santi Santamaria se han publicado un total de nueve libros de cocina. Con La cocina al desnudo (2008), Santamaria obtiene tambi\u00e9n como autor diferentes premios internacionales.
