Juli 1957 \u2013 16. Februar 2011), auch bekannt unter dem Namen Santi Santamaria, war der erste spanische Koch, der mit 3 Michelin Sternen ausgezeichnet wurde (1994). In seinem 3-Sterne-Restaurant El Raco de Can Fabes, sp\u00e4ter Can Fabes genannt, konzentrierte Santi Santamaria sich auf die katalanische Slow-Food-K\u00fcche mit frischen mediterranen Zutaten. (Restaurant Sant Celoni in Madrid)<\/strong><\/p>\n<h2 style=\"color: grey;\">Santamaria (Slow Food und frisch) versus Ferran Adria (Molekulark\u00fcche): ein Meinungsstreit unter K\u00f6chen.<\/h2>\n<p>Sternekoch Santi Santamaria wehrte sich gegen den Trend der Molekulark\u00fcche, der den Teller mit Geliermittel, Stabilisatoren und Emulgatoren f\u00fcllte. Ein Labor der Experimentalgastronomie, das von Ferran Adria vom Restaurant El Bulli vorangetrieben wurde. Die Auseinandersetzung zwischen den beiden K\u00f6chen wurde teilweise mit harten Bandagen gef\u00fchrt. Dennoch war Ferran Adria bei der Er\u00f6ffnung des letzten Restaurants von Santi Santamaria in Singapore anwesend.<\/p>\n<h2 style=\"color: grey;\">Santi Santamaria: 9 Kochb\u00fccher, 7 Michelin-Sterne und 6 Spitzenrestaurants<\/h2>\n<p>Der katalanische Meisterkoch Santi Santamaria hat mit seinen 6 Restaurants insgesamt 7 Michelin-Sterne erhalten: 3 Sterne f\u00fcr Can Fabes (Sant Celoni), 2 Sterne f\u00fcr Sant Celoni (Madrid) und jeweils 1 Michelin-Stern f\u00fcr Tierra in Toledo und Evo in Barcelona. Au\u00dferdem betrieb Santi Santamaria Restaurants in Dubai (Ossiano) und Singapore (Santi). Von Santi Santamaria sind insgesamt neun Kochb\u00fccher erschienen. Mit La cocina al desnudo (2008) erh\u00e4lt Santamaria auch als Autor verschiedene (internationale) Auszeichnungen.
